Added additional necessary documentation for external authentication

I was missing the information that I needed to enable the specific django application BEFORE being able to configure the social account provider.

In the django admin UI it just says "invalid value" when you try to use e.g. "OpenID Connect" - after adding the app via `PAPERLESS_APPS` the UI actually becomes a combo box and you can select the provider.
